The culinary journey for our Whole Beast Feast is a fun one. 48 hours before your reservation, Chef Stephen finds the perfect porker from a California farm. Then, we bring it home and give it a day-long bath in our perfectly tangy chili-citrus-beer brine. On the day of your reservation, the beast is stuffed with citrus, cilantro, and chilis, rubbed with chimichurri, and slow-roasted to get that deliciously savory flavor and a crispy skin. When you arrive with a very hungry crew, we bring it out to showcase all its glory, then slice it up for your table back in the kitchen. And don’t worry, it’s not alone. Cornbread muffins, beans, blue cheese coleslaw, and butter potatoes are there on the side to accompany your freshly-sliced, slow-roasted pork. If you like things to be a bit saucy, we also provide extra chimichurri, romesco, and demi-glace to spice things up.
