November is almost upon us which means many people in the Las Vegas valley (locals and visitors alike) are preparing for the Las Vegas Rock ‘n’ Roll Marathon! Runners are training for the big day ahead and will carb load days before the big day so that they perform their best! So why do runners know that they should eat high-carb foods such as pasta before their marathon? To answer this simply, carbs are a great source of energy which is vital when running 26.2 miles, 13.1 miles, or 5K. To answer this with science, the carbohydrates inside your pasta are converted into glucose and then stored as glycogen inside your muscles and liver when your body isn’t using the energy. When your body needs a quick boost of energy, the glycogen is broken down which then releases the stored glucose into the bloodstream so that your cells have the fuel to complete that race!
