“I opened Searsucker in Austin so I could visit as much as possible. I love the land of breakfast tacos and brisket, but sometimes you have to keep it a lighter! When I’m away and craving an Austin taco, I often whip up an easy Salsa Verde that’s made fresh and bright with local herbs.”

Brian Malarkey’s Salsa Verde


1 1/2 cup picked parsley
1/2 cup basil leaves
1/2 cup pea tendril
1/4 cup chives
1/4 cup tarragon leaves
3 garlic cloves
1 1/2 cup olive oil
1 tsp black pepper
2 whole lemons seated
Salt to taste


Put herbs, lemon zest and garlic in a blender or food processor. Add olive oil as you blend. Add black pepper and salt to taste. Makes about 1 pint of salsa.
